Grandma’s Scones

This is my grandma’s scone recipe.


My grandma passed it down to my mother who passed it on to me

I’m not sure where it originated, but it is one of the MOST delicious Meals you can make!


It is similar to Indian fry bread. It’s a flat dough bread, fried, that magically puffs up like little pillows of joy! These delicious scones can be eaten alone or with various salty or sweet toppings.


Ingredients:

  • 2 tablespoons active dry yeast

  • ¼ cup warm water

  • 2 tablespoons sugar

  • 4 eggs – beaten

  • 2 tablespoons oil

  • 1 ½ teaspoons salt

  • ½ teaspoon baking soda

  • 1 quart warm buttermilk

  • 8 cups flour

  • 2 quarts oil – for frying

  • Toppings – see notes


Instructions:


1. Dissolve 2 tablespoons yeast in ¼ cup warm water with 2 tablespoons sugar - Let stand 10 minutes to dissolve (mixture will rise and foam).


2. While yeast is rising, in EXTRA LARGE bowl, beat 4 eggs and combine 2 tablespoons oil, 1 ½ teaspoons salt, & ½ teaspoon baking soda.

3. Add 1 quart warm buttermilk to egg mixture.


4. Add the dissolved yeast mixture to the egg mixture and mix well together.


5. Add 8 cups flower. Mix everything well together with heavy spoon.


6. Cover & let rise until doubled (can put in frig up to 3 days).


Frying directions:


1. Line a large plate or baking pan with paper towels.


2. Fill a large pot with frying oil and heat to 350-375 degrees Fahrenheit over medium-high heat.

3. Roll out dough to ¼ inch thick slab on a lightly floured surface.

4. Cut dough into 3 or 4 inch circles or squares.


5. Carefully place two or three pieces of dough in the oil and fry until golden brown on each side (about 1-2 mins). Transfer to paper towels to drain. Repeat until the dough is all fried.


6. Serve with toppings – see notes

  • Lettuce

  • Tomatoes

  • Avocados

  • Onions

  • Olives

  • Sour cream

  • Whatever salty topping you love


Sweet topping ideas:

  • Cinnamon and sugar

  • Honey

  • Jam

  • Whatever sweet topping you love
